Better Than Betty Chocolate Brownies

These brownies are the perfect combination of crunchy and gooey.  To make your work week meals even easier, the dry ingredients can be prepared months in advance and stored in a ziplock bag, either in your shelf or in your freezer. When you are ready to make brownies, simply pour into a bowl and add the wet ingredients, just like a boxed brownie mix.

In a medium or large bowl, combine sugar and cocoa.

Stir in flour, baking powder and salt.

Add eggs, vegetable oil and vanilla. Combine well.

Generously grease a baking pan. Use a mixture of sugar and cocoa instead of flour to help prevent sticking. Yes, I know this is a round pan, but I didn’t have the patience or desire to wash the square pans first.  The brownies tasted delicious just the same.

Pour your brownie batter into prepared pan and bake on 350 degrees for 40-45 minutes.

1 Cup Sugar

1/2 Cup Flour

1/2 Cup Cocoa

2 Eggs

1/2 Cup Vegetable Oil

1 Teaspoon Vanilla

1/4 Teaspoon Baking Powder

1/4 Teaspoon Salt



In a medium bowl combine sugar and cocoa

Stir in flour, baking powder and salt.

Add eggs, vegetable oil and vanilla, mix well.

Pour into greased 12×12 baking pan. Bake on 350 for 40-45 minutes.



* The size of the pan used depends on how thick you like your brownies. The smaller the pan means the thicker the brownies and the longer they need to cook. My family prefers medium thick, slightly crunchy brownies. If your family likes gooier brownies, simply adjust the pan size and bake time accordingly.
