1 Medium Head Romain Lettuce
1 Medium Bag Baby Spinach
1 (12 oz.) Feta Cheese Crumbled
1 Can Sliced Orange (reserve the syrup)
1 Apple, chopped into bite sized pieces (sweeter apples works best)
1/4 – 1/2 Cup Dried Cranberries
1/4 Cup Walnuts, toasted
Salt and Pepper, to taste
Wash the lettuce and spinach and tear into bite sized pieces. Drain well and place into large salad bowl and toss together.
Add two-third of the feta cheese. Top with oranges, apples, and cranberries. Finish by adding the remaining sprinkle of cheese and the toasted walnuts. Drizzle with a bit of the reserved orange syrup to taste. Serve.
Note: Experiment with combinations of your favorite seasonal fruit. Many will work very well in this recipe.
